For over twenty-five years our Roasted Rack of Lamb has been a huge hit with Members and their guests. We've actually served this dish many times on New Year's Eve as well. It's simple and easy to prepare at home. I've done side by side comparisons of lamb from many other regions, nationally and internationally, and while they might look the same but I assure you - they don't taste the same. Something about the flavor and texture of the Colorado lamb used in this recipe makes it sensational.
